If you have basic herbs stocked in your pantry, you’ve got what you need to make this delicious and easy kosher sausage!
As a family that sticks to a kosher diet, my greatest loss is sausage! I know there are some options out there—I’ve tried them. Most of them are not organic, and those that are, are OUTRAGEOUS in price. Charlie came up with this concoction, and we’ve never missed sausage since! (Aside from the ease of pulling out sausage that takes basically no time to cook!)
If you have basic herbs stocked in your pantry, you’ve got what you need to make this delicious kosher sausage. We prefer it with ground turkey or chicken, but it’s great with any meat you have on hand.
Ingredients for Kosher Bratwurst Sausage:
ground meat (poultry is delicious, but beef is great too)
eggs
salt
pepper
nutmeg
caraway seeds
ground ginger
celery seed
smoked paprika
cayenne
dry mustard
coriander powder
sage
sugar
dried onion
Ingredients for Kosher Breakfast Sausage
ground meat (poultry is delicious, but beef is great too)
eggs
maple syrup
salt
pepper
nutmeg
caraway seeds
ground ginger
celery seed
dried fenugreek
cayenne
dry mustard
fennel
sage
dried onion
To Make:
Thoroughly mix the meat and eggs together. In a small dish, mix all of the dried ingredients together, then mix into the meat/egg mixture until evenly dispersed. Let rest in the refrigerator for 30 minutes before using in your favorite dish.
Make Ahead:
Prepare as above, but instead of letting it rest in the refrigerator, divide your kosher sausage into one pound portions, (eye balling it into 3 works!) place in freezer bags, then wrap in tin foil to protect it from freezer burn. Place in the fridge the day before you want to use it. Or, if you’ll be home all day, let it sit out in a bowl at room temperature, checking on it regularly. Once it’s thawed, use it immediately, or place in the fridge until you’re ready to use it!
Favorite Ways to Eat Kosher Sausage
One of my very favorite go-to dinners is cabbage and sausage with rice. Maybe this is my German blood speaking, but it is so delicious and satisfying to me!
It’s an easy way to elevate the flavor of any soup you’re adding meat to!
The breakfast sausage is delicious in biscuits and gravy or in what my dad called “Goulash”… I should ask him to do a guest post showing all his tricks for that! (Pictured below)

Kosher Sausage: Bratwurst
Kosher sausage is delicious and easy to make with basic spices that you probably have in your pantry!
Ingredients
- 3-pounds ground meat (poultry is delicious, but beef is great too)
- 2 eggs
- 1 TBS salt
- 1 tsp pepper
- 1/2 tsp nutmeg
- 1/2 tsp caraway seeds
- 1/2 tsp ground ginger
- 1/4 tsp celery seed
- 1 tsp smoked paprika
- 1/4 tsp cayenne
- 1 tsp dry mustard
- 1 tsp coriander powder
- 1 tsp sage
- 2 TBS sugar
- 1 TBS dried onion
Instructions
- Thoroughly mix the eggs and meat together.
- In a separate bowl, mix the rest of the ingredients together.
- Add spice mix to the egg and meat mixture. Using your hands, work the ingredients until everything is incorporated evenly.
- Place in refrigerator for 30 minutes to allow flavors to develop before using.
- If not using right away, separate into 3 even portions and place into freezer bags. Ensure all the air is out of the bags, then seal and wrap in tin foil.
Kosher Sausage: Breakfast
Kosher sausage with maple syrup and fennel is easy to make and elevates the flavor of any dish you add it to.
Ingredients
- 3 pounds ground meat (poultry is delicious, but beef is great too)
- 2 eggs
- 4 TBS maple syrup
- 1 TBS salt
- 1 tsp pepper
- 1/2 tsp nutmeg
- 1/2 tsp caraway seeds
- 1/2 tsp ground ginger
- 1/4 tsp celery seed
- 1 TBS fenugreek
- 1/4 tsp cayenne
- 1 tsp dry mustard
- 1 tsp fennel
- 1 tsp sage
- 1 TBS dried onion
Instructions
- Mix meat, eggs and maple syrup together.
- In a separate bowl, combine the rest of the ingredients.
- Pour spice mix into the meat mixture and work with your hands until all the ingredients are evenly incorporated.
- Let rest in refrigerator for at least 30 minutes before using to allow flavors to meld.
- If you do not intend to use it all right away, divide into 3 even portions and place in freezer bags.
- Ensure all the air is out of the bag, then seal and wrap with tin foil to prevent freezer burn.
