Weighing every ingredient to the exact gram could land you in the “fussy” department. I admit, once I start weighing, it’s a fun challenge to see how close I can get to the exact gram the first try. I am the variety that will pull out tiny fingerfuls of ingredients if I happen to be over by a few grams. But it doesn’t HAVE to be this way! If you are the variety that can ignore that compulsion, by all means, GO WITH IT!
It’s not necessarily beneficial to weigh every single ingredient. 20 grams of salt is 1 TBS. If I’m weighing, guess how I get the salt into the bowl being weighed? By using 1 TBS! I’m not saving myself anything here.
If I’m following a recipe calling for weights, I will happily do all of my ingredients that way. However, if I’m using measurements and it calls for honey, you better believe I’m going to get that bowl on a scale and weigh my honey instead. Can you imagine a life where you never have to clean honey out of a measuring cup again? It’s life changing! (And I know the oil trick, but that leads me to my next point!)
I decided to figure out the weight of a cup of oil when I was sick of measuring it out for mayonnaise. I make it in a mason jar, but mayonnaise has a very specific order that the ingredients go in. Oil is last, so it makes it difficult to gauge exactly where a cup is without having to measure it. Knowing how much it weighs saves me an unnecessary dirty dish!
The last item that I always weigh is a trick! I don’t necessarily always weigh flour. But I do weigh my wheat berries. I grind the majority of our flour, and if something calls for a cup of flour and I scoop out a cup of wheat berries and use all of it, my recipe will be ruined—there would be far too much flour. If you are someone who uses wheat berries, knowing this number is going to ensure that you don’t have to over-grind for your recipes!
